Between Arles and Avignon, this mineral, almost theatrical setting reveals a Provence that is wild, luminous, and profoundly preserved. All around, the Baux valley unfolds with olive groves, vineyards, and contours sculpted by the mistral, while the medieval village, perched on its limestone spur, offers one of the most spectacular panoramas in the South of France.
The story of Baumanière began in 1945, when Raymond Thuilier transformed an isolated Provençal farmhouse into an exceptional house devoted to hospitality and French gastronomy. Opened in 1946, L’Oustau de Baumanière quickly became a legendary address, awarded three Michelin stars as early as 1954 and frequented by heads of state, artists, royalty, and discerning travelers. Joined in 1969 by his grandson Jean-André Charial, Raymond Thuilier passed on a family spirit founded on excellence, a love of the terroir, and understated elegance. Today, under the guidance of the Charial family and chef Glenn Viel, Baumanière continues this singular story, blending Provençal heritage, haute cuisine, and a lasting commitment to sustainability.
Five Houses to Wake Up Facing the Gardens
At Baumanière, the rooms reveal themselves like secluded refuges scattered across a Provençal landscape of almost theatrical beauty. Spread between five houses with distinct personalities — L’Oustau, Le Mas Flora, Le Mas Carita, Le Manoir, and La Maison de Famille — they seem to extend the nature around them: fragrant gardens, rose beds, wisteria, century-old trees, and the golden light of the Alpilles. Behind sun-drenched façades, some belonging to buildings several centuries old, the atmosphere cultivates an elegance without ostentation, composed of old stone, exposed beams, raw wood, linen, terracotta, and botanical tones.
Each of the 53 rooms and suites has its own identity, in a delicate dialogue between heritage and modernity. Under the direction of Geneviève Charial and Philippine Lemaire, interior architect and designer, more than 25 rooms have recently been renovated with the help of artisans, in a spirit that is both contemporary and deeply respectful of the soul of the place. Vintage furniture, antiques, old paintings, and contemporary creations compose serene interiors, accented with soft greens, luminous beiges, and terracotta nuances. Solid wood floors, velvet armchairs, exceptional bedding, and bathrooms combining marble and wood express a discreet, sincere luxury, perfectly rooted in Provence.
We stayed at Le Manoir, in a Luxe Terrace room, and it is perhaps here that the art of living at Baumanière reveals itself most gently. More spacious than the Classic rooms, it offers a beautiful sense of openness, extended by a private terrace where one naturally lingers from morning, facing the gardens or the contours of the Alpilles. Inside, the decor embraces refined sobriety: natural materials, contemporary lines, Provençal details, soothing shades, and generous light create an atmosphere that is both intimate and luminous. It has the hushed comfort of great country houses — impeccable bedding, enveloping seating, an elegant bathroom — with, in the background, the rare privilege of living between indoors and outdoors, windows open to the scents of flowers, wild herbs, and sun-warmed stone.

Breakfast continues the estate’s peaceful and refined spirit, like a morning interlude bathed in the light of the Alpilles. At La Cabro d’Or, Michel Hulin creates refined Provençal cuisine, deeply rooted in the wild nature of the Alpilles and the generous soul of Provence. Since 2001, this passionate chef has composed precise and luminous dishes inspired by the seasons, the market, Baumanière’s organic vegetable garden, and carefully selected local producers. In this romantic and convivial setting, his Gourmandise menu celebrates the terroir with elegance, while olive oil from the Baux valley enhances his creations, including an entirely vegetarian menu. In this cocoon with the charm of an old-fashioned boutique, between wood, glass, metal, terracotta tones, and deep blue, Brandon Dehan, executive pastry chef of the legendary three-star house, presents a personal vision of chocolate. Indulgent bars, pure origins from Cuba, São Tomé, Ecuador, or Vietnam, boxes of ganaches and praline bonbons, seasonal confections: each creation celebrates the precision of the gesture and the richness of flavor. The signature cicadas, delicately perfumed with herbs from the vegetable garden and the Alpilles, pay vibrant tribute to Provence, in this artisans’ square where authenticity and modernity converse with elegance.
A Promise of Softness
Opening onto the gardens of Baumanière, Le Spa unfolds its 500 sqm as a serene interlude in the heart of Provence. In a pure and warm atmosphere inspired by the Val d’Enfer, it brings together six treatment rooms, some opening onto the garden, a luminous hammam, a relaxation room, and a fitness area. The menu gives pride of place to Mediterranean rituals, from olive scrubs and essential oil wraps to treatments by Une Olive en Provence or Sisley. Unfortunately, we did not have the opportunity to try it during our stay.
A Sensory Interlude Among Gardens, Pools, and the Provençal Art of Living
At Baumanière, everything invites you to savor Provence at its most sensory and refined. New for 2026, La Balade de Baumanière offers a path through gardens and vegetable plots, conceived as a contemplative pause at the heart of the estate: stopping, breathing, listening to nature, and discovering the botanical heritage patiently tended by the gardeners. Families will also enjoy a playful area near the goat enclosure and organic garden, where children can wander between the paths and taste cherry tomatoes. For moments of relaxation, the estate’s three pools, nestled in green settings sheltered from view, promise gentle summer siestas.
Around the estate, Baumanière opens the doors to a Provençal art of living rich in discoveries. Guests can explore the Château des Baux-de-Provence, a majestic witness to the Middle Ages, or discover Les Carrières de Lumières, which offer a spectacular immersion in art and music, with a 2026 program devoted to Picasso and Frida Kahlo. Outdoor enthusiasts will appreciate hikes in the Alpilles, bicycle rental on request, and nearby golf courses. Finally, epicureans can set out to meet the region’s renowned vineyards and olive mills, where the green gold of Les Baux-de-Provence, bearing the AOP label, reveals the full gourmet soul of the territory.
My Review
Baumanière leaves the rare memory of a stay where every moment seems attuned to the light of the Alpilles: the quiet elegance of the houses, the beauty of the gardens, the emotional power of L’Oustau, the Provençal generosity of La Cabro d’Or, the softness of a terrace in the early morning, and that precious feeling of inhabiting, for a few days, a place steeped in history without ever being frozen in the past. One comes for a mythical table and stays for an atmosphere, an attentiveness, a silence, an art of detail that transforms Provence into an intimate and luminous experience. Away from the bustle, yet at the heart of a territory vibrant with culture, nature, and flavor, this family address embodies a certain idea of French luxury: sincere, sensitive, rooted in the land, driven by excellence and by a deep desire to pass something on.
I loved:
- An incredible estate, as vast as it is sumptuous, enhanced by its many pools, buildings perfectly integrated into the landscape, and charming vegetable garden.
- The beautiful history of this estate, created in 1945 and still in the hands of the same family, gives it a rare and authentic soul.
- A superb breakfast, fully in keeping with the refinement of the setting.
I regretted:
- The staff does not quite meet the expected standards, with a level of service that lacks precision and consistency.
