On the plate, chef Nicolas Thomas orchestrates a delicate composition in five movements, renewed according to the passing weeks, the seasons and his inspiration. Two set menus are offered, “Sunlit Spring” and “Early Summer”, their poetic names elegantly introducing the key ingredients of each creation. We chose “Early Summer”, a wonderfully fresh gastronomic journey composed of seasonal fragments and flashes of nature, where every course seems to recount the radiant arrival of warmer days with precision, sensitivity and a distinct flair for presentation.

A return from the market, a basket, a discovery… unfolds as a gastronomic stroll through a series of gestures, almost like a miniature tableside performance, accompanied here by a glass of Serveaux Fils Pur Meunier champagne. The experience begins with a tasting spoon bearing a playful, delicate trompe-l’œil olive, before moving on to a croquette inspired by Sète’s traditional tielle, enlivened with an aioli that immediately evokes the Mediterranean. Beneath the croquette, the surprise continues as a box opens to reveal a silky savoury custard, like a closely guarded market secret. Next comes a nasturtium leaf, served both raw and roasted, followed by cabbage and smoked eel in a combination that is vegetal, briny and subtly smoky. To conclude this opening sequence, a soft, golden homemade brioche invites dipping into a deep, fruity Luberon olive oil made from black olives, completing a playful, regional and refined introduction.

Continuing this opening chapter, Mediterranean bluefin tuna arrives as a deep, sensual composition nestled at the centre of a wide matte-black bowl, which heightens the full spectrum of seasonal reds: confit beetroot with garnet reflections, wedges of confit and marinated cherry, purple orache leaves and bright touches of young green shoots. Beneath this botanical and fruit-laden adornment, the bluefin tuna reveals a refined interplay of briny intensity, earthy sweetness and delicate acidity, while an XO-style lobster jus coats the dish in a rich, umami-laden, subtly spiced amber sheen. Minimalist yet exquisite, the presentation gives the plate the appearance of a gastronomic jewel—Mediterranean, seasonal and resolutely contemporary.

After this marine and earthy intensity, the next plate appears as an ode to spring, with a light, delicately smoked white emulsion enveloping a fresh and vibrant composition. At its centre, asparagus, tender cabbage and peas mingle with an abundance of herbs, mint leaves and edible flowers in shades of yellow and violet. Beneath this local harvest, an elderflower and pea cream brings floral, vegetal sweetness, while the emulsion’s airy bubbles add a sense of refinement and lightness. It is a radiant celebration of vegetables, with every bite playing between freshness, creamy roundness, smoky notes and herbaceous aromas.

Red mullet follows with the elegance of a precious miniature, its pearlescent flesh gleaming beneath an amber veil of red mullet sauce, intensified by a deep reduction of vegetables and fish jus. Alongside it, artichoke confited in celery jus lends a gentle vegetal sweetness, extended by a velvety artichoke sauce, while a vivid green chive purée sharpened with wild-garlic vinegar awakens the dish with lively, almost springlike freshness. The plate achieves a refined balance between sea, earth and woodland, displaying the understated elegance of the finest restaurants, where every detail seems to whisper of warmer days returning.

“At Last, Spring’s First Red” brings the journey to a close like a delicate recollection of strawberry tart: a precious miniature set at the centre of a white plate and crowned with a glossy red shard resembling freshly picked fruit. Strawberry appears in all its nuances—raw, lightly cooked, as a sorbet and in a geranium-scented compote—supported by a reconstructed pastry crumble and the delicate crunch of an opaline tuile, while verjuice sorbet introduces a fresh, tangy, almost vegetal tension. Petit fours extend the elegance of the meal’s finale with the same quiet artisanal spirit: a truffle with a cappuccino centre, a tonka-bean praline tart and a madeleine to take home, like one last gourmet memory tucked away for the journey.
