More than just a stay, it's an immersive experience at the crossroads of refinement, authenticity and emotion.

A Peaceful Haven Within the Mont-Blanc Massif

Armancette is located in the heart of Saint-Nicolas-de-Véroce, a typical mountain village in Haute-Savoie, perched above Saint-Gervais-les-Bains. Far from the hustle of major resorts, this peaceful hamlet enchants with its authentic charm—traditional chalets, a listed baroque church, and a preserved ambiance. A member of the prestigious ‘Leading Hotels of the World', L'Armancette enjoys an exceptional setting with breathtaking views of the Mont-Blanc massif and direct access, just 100 meters away, to the ski lifts serving the 220 slopes of the Évasion Mont-Blanc area. Open year-round, the hotel combines the tranquility of a mountain village with the appeal of a vast ski area, making this discreet address a true luxury retreat, ideal in both winter and summer.

Between Alpine Tradition and Contemporary Design

Behind its grand Alpine chalet façade, made of golden wood and Mont-Blanc granite, the Armancette hotel cultivates a style that is both refined and warm, in perfect harmony with the traditional architecture of Saint-Nicolas-de-Véroce. Designed by local architect Gilles Grandjacques, the hotel naturally blends into the landscape, elegantly reinterpreting the codes of Savoyard construction. Inside, the décor, imagined by Megève Design studio, focuses on authenticity and comfort, combining local stones, wooden shingles, slate tiles and plush textiles to create an ambiance that is both chic and Alpine.

The five-star's style stands out for its refined, mineral aesthetic punctuated with bold touches, such as street art-style frescoes specially commissioned for the underground garage. This subtle balance between tradition and modernity gives rise to a unique boutique hotel—the only one in Saint-Gervais—where luxury is expressed without ostentation. The former village bakery, on which the hotel was built, now echoes on the ground floor with a bakery-pastry shop open to all, symbolizing a vision of luxury rooted in sharing and conviviality.

Intimate Elegance and High-End Comfort

Armancette has only 19 rooms and suites, each different and carefully designed as true cocoons of comfort and elegance. Far from impersonal standards, every room unveils a unique atmosphere where noble materials—patinated wood, Calacatta marble, Brazilian granite—mingle with refined fabrics such as velvet, flannel, and silk, alongside contemporary furniture by top Italian designers. The balance between chic rusticity and modernity is found in the details: oak floors, plush rugs, faux-fur throws, bronze accents, and luxurious bathrooms in various marble shades.

We stayed in a Saint-Nicolas room, a 30 sqm haven with an intimate ambiance, perfectly designed for two. This spacious room opens onto a private balcony with an incredible view of the Dômes de Miage, offering a stunning Alpine spectacle from the moment you wake. Inside, elegance is expressed through the blend of high-end furnishings and natural materials in a revisited mountain style. The bathroom, featuring both a walk-in shower and a bathtub, invites relaxation. A refined retreat where every detail celebrates comfort and serenity.

A Gourmet Awakening Facing the Peaks

At Armancette, breakfast is a true moment of pleasure, where authenticity blends with indulgence in an exceptional setting. Served each morning at La Table d'Armante or in-room, it can also be enjoyed on the terrace facing the grandeur of the mountains—as we had the joy of doing. The continental buffet highlights homemade delights from the hotel's bakery, set up in the village's old bakehouse: warm breads, crisp pastries and fresh cakes delight the senses. This is complemented by a fine selection of fresh fruit, yogurts, cereals, and an à la carte menu of hot dishes made to order—eggs in all styles, fluffy pancakes… All served with care in a peaceful atmosphere, ideal for starting the day with a touch of refinement.

Thomas Vonderscher, the Soul of Alpine Gastronomy

At the helm of Armancette's gastronomy, chef Thomas Vonderscher brings an audacious and refined vision of Alpine cuisine. Trained by great names such as Sébastien Chambru, Fabien Galibert and Jérôme Ryon, he earned his first Michelin star in 2019 in Toulouse, then a second near Saint-Malo in 2023. Now based in Saint-Nicolas-de-Véroce, he passionately showcases Savoyard terroir, working exclusively with local ingredients sourced within a 90-minute radius of the hotel. This globe-trotting chef plays with textures—from crisp to melt-in-the-mouth, smoky to soufflé—to reveal pure flavors while combining culinary precision with a spirit of sharing. His culinary universe flourishes through two restaurants with distinct yet complementary identities, with desserts crafted by pastry chef Gauthier Chaffard.

Mont Joly, a cozy bistro located right across from the hotel, offers a more relaxed take on this terroir-driven cuisine. In a contemporary setting open to a garden and the mountains, the menu is creative and generous, with each dish highlighting regional ingredients. Upstairs, a lounge with a fireplace and billiards table, plus a panoramic terrace, lets guests extend the experience over a cocktail or homemade dessert in a convivial, authentic atmosphere.

More gastronomic in tone, La Table d'Armante unfolds in an intimate setting of stone and wood, enhanced by organic furniture from designer Christophe Delcourt. The intentionally locavore menu refines Alpine classics while preserving product identity. Every dish is designed to reveal raw flavors through mastered techniques, subtle sauces, and elegant presentation. Food and wine pairings are orchestrated to elevate each course with precision.

Located in the former village bakery, Armancette's tea room is more than just a gourmet space—it's a true living area open to all, perpetuating the spirit of the Saint-Nicolas-de-Véroce hamlet. Whether for a quick breakfast, an afternoon treat or a post-hike snack, the place invites you to sit and savor. Pastry chef Gauthier Chaffard and his team offer a daily selection of homemade cakes and pastries, evolving with the seasons.

At La Table d'Armante, The Mountain Is Tasted with Finesse

We had the pleasure of dining at La Table d'Armante for an exceptional dinner, which began in elegance with a glass of champagne and a selection of amuse-bouches. Presented on a magnificent hand-carved wooden board poetically depicting the Alpine landscape, these bites pay tribute to Armancette's majestic setting. Arranged with almost choreographic precision, they express all the finesse and creativity of chef Thomas Vonderscher. The first, vegetal and subtly woody, pairs smelt with fir buds in a bite evoking forest foraging. The second, a crispy hazelnut tartlet, marries the crunch of radish with the melting tenderness of trout in a perfectly balanced land-sea contrast. Lastly, a mini mint-scented pike-perch waffle adds freshness and generosity to this introduction.

Our ‘Alpine Treasures' menu continued with a dish emblematic of the chef's style, blending technical skill and sensitivity: a slow-cooked leek, tender and fragrant, forms a delicate vegetal base, enhanced by a farm-fresh egg yolk from Marin, served mimosa-style. Its creamy texture and golden hue immediately draw the eye, while a vibrant green watercress purée, both peppery and refreshing, wraps around it. Visually minimalist yet rich in aromatic complexity, this dish celebrates the plant world in all its nobility. A humble yet masterful plate that reflects the house philosophy: elevating simple ingredients with refinement and intelligence.

Next came a dish as generous as it was sophisticated: freshly caught pike from Éric Jacquier, rolled with precision, revealing fine, delicate flesh, delicately enhanced by a spruce bud beurre blanc. This creamy, aromatic sauce wraps the fish in a comforting velvety coat. Roasted pointed cabbage, both tender and crispy, adds a rustic and warm dimension, while fish roe bursting on the palate brings perfectly dosed salinity. A dish deeply rooted in its terroir, yet elevated by elegance and masterful cuisine.

Guinea fowl from the Chambotte farm confirms the chef's high standards for ingredients. Stuffed with wild garlic, the meat is tender and juicy, served with a crispy thigh confit with foie gras, whose rich melt-in-the-mouth texture adds depth and indulgence. A noble, meaty morel mushroom blooms in a reduced Savoie wine sauce with powerful, woody aromas. A few puffed potatoes and crunchy peas round out the dish, adding contrast and vegetal freshness. The result is a perfectly balanced, generous, refined and resolutely Savoyard plate.

To continue this terroir-rooted experience, a cheese platter from Ferme des Roches Fleuries is offered with understated elegance. Alongside a house-made red fruit jam, the assortment—pressed, soft, washed rind or bloomy rind cheeses—showcases the region's rich cheese heritage.

The dessert, called ‘Strawberry Cooked Ducs de Savoie Style', ends the meal on a light and graphic note. Shiny strawberries, carefully marinated, meet translucent rhubarb discs and an airy verbena cream piped into little clouds. The tangy sorbet that completes the creation refreshes the palate with liveliness, extending the sensation of delicacy and freshness. Presented on an organically shaped plate, this dessert combines elegance, lightness and technical precision—true to pastry chef Gauthier Chaffard's signature style.

The final sweet note comes from a selection of mignardises served on a second hand-carved wooden board shaped like Alpine peaks. Chocolate truffles, crispy bites and delicate shortbread cookies are arranged on this miniature landscape—a poetic nod to Armancette's natural surroundings. A conclusion that is playful, generous and refined, just like the dinner itself, where every detail celebrates excellence, terroir and emotion.

A Haven of Well-Being Facing the Dômes de Miage

We enjoyed a moment of pure serenity discovering Armancette's spa early in the morning, when the space was still bathed in absolute calm. Nestled in the heart of the hotel, this generous wellness area—especially for a property of this size—offers an exceptional relaxation experience facing the Dômes de Miage. From the entrance, the indoor/outdoor heated pool, with its sleek stainless-steel lines, invites both contemplation and relaxation. On the solarium terrace, two outdoor jacuzzis and several loungers allow guests to soak in the Alpine panorama in a peaceful atmosphere.

Indoors, the ambiance becomes more subdued with a granite overflow jacuzzi, a hammam, a sauna, and a relaxation room ideal for unwinding. The atmosphere is gentle, the spaces generous, and the facilities impeccable. The spa also features two treatment rooms using KOS Paris products. This moment of well-being, experienced in tranquility during the early hours of the day, was a true luxury in the overall Armancette experience.

Alpine Pleasures Through the Seasons

Beyond the winter delights of the vast Évasion Mont-Blanc ski area, Armancette offers a wide range of activities all year round. As soon as the warm weather arrives, the mountains become the perfect playground for hiking, climbing, mountain biking or paragliding—activities accessible directly from the hotel or within ten minutes.

For those wanting to maintain their fitness routine, a fully equipped gym with Technogym machines is available 24/7, offering the chance to train anytime in a bright, modern space. A perfect balance between fresh air, thrills, and inner well-being.

My Opinion

Nestled in the unspoiled setting of Saint-Nicolas-de-Véroce, Armancette embodies Alpine elegance at its finest. Combining the charm of an authentic village with a refined art of living, this discreet hotel offers a rare experience where every detail celebrates the mountains with precision and modernity. Between warm hospitality, signature gastronomy, wellness with a view, and top-notch comfort, Armancette captivates in all seasons with its subtle balance of tradition and excellence. An exceptional refuge where you come to recharge, savor and contemplate—and leave with a light heart and a full spirit.

What I Loved:

  • The spectacular view from every space—whether the room, the spa or the restaurant terrace, the mountain panorama is simply breathtaking.
  • The perfectly designed, harmonious contemporary Alpine décor that creates a warm atmosphere without ever overdoing it.
  • The spa, a true haven of relaxation, with its pool and jacuzzis offering a stunning mountain view.
  • What I Regretted:

  • Located in the heart of the village, the hotel is occasionally subject to some traffic noise—a slight drawback in an otherwise very peaceful setting.
