We began our evening with a Dearless Hoopoe mocktail for my husband (a subtle mix of Rooibos red tea, passionfruit-mint, aquafaba, and lemon) and a Death from Above cocktail for me (a bold creation featuring tequila, passionfruit syrup and ginger, lime, sparkling wine, and pineapple juice). All accompanied by an unforgettable spectacle: the sun setting over Bangkok's vibrant metropolis.
Our culinary discovery began with a carefully curated selection of international dishes offered by the chef. We enjoyed a crispy tuna ceviche, combining the freshness of lemongrass and chili with the crunchy texture of crispy seaweed, paired with creamy guacamole. Next, a fish salad with cobia and mustard leaves delighted us with its mustard leaves lightly seasoned with lime, rings of shallots, fried gourami, and shards of lavash. To end this savory feast, a braised beef pie provided a comforting touch: braised short ribs wrapped in golden puff pastry, enhanced by a blackberry chutney and creamy beef sauce. For dessert, freshness was the highlight with a frozen pineapple, where the sweetness of flambéed pineapple harmonized with the lightness of coconut cream and sorbet, elevated by pineapple granita, a hint of vodka, and brown sugar.
