Located in the very heart of the 1st arrondissement, just steps from Place Vendôme and the Tuileries Garden, Château Voltaire stands out as an exceptional address in an elegant and discreet Paris. Behind its façade listed as a Historic Monument, this five-star hotel—born from the union of three 17th- and 18th-century buildings—embodies a unique vision of French luxury. Conceived by Thierry Gillier, founder of Zadig & Voltaire, and designed by Franck Durand and the architect duo Festen, the establishment blends classical refinement with contemporary comfort. Its 32 rooms and suites reveal a subtle aesthetic, with whitewashed walls, Art Deco lighting, and furniture inspired by the Louis XIII period. We had the pleasure of dining there and discovering Brasserie l'Émil, a place where Parisian elegance is expressed through simple and refined French cuisine, served in a warm and authentic setting.

From the moment you enter, Brasserie l'Émil enchants with its cozy atmosphere where Parisian elegance is expressed with subtlety. The decor harmoniously blends Haussmannian architectural heritage with a boldly contemporary touch. Coffered ceilings and period tiles recall a bygone Paris, while solid oak banquettes, enhanced with midnight blue velvet, frame the room with refinement. Light wood tables with clean lines sit alongside timeless bistro chairs, bathed in soft light from blown-glass pendant lights. A few touches of brushed brass add warmth, enhanced by golden reflections dancing across carefully placed mirrors. Altogether, the decor creates a chic and welcoming ambiance, perfect for lingering evenings over a good meal.

Comforting and convivial, this early dinner leaves room to enjoy the rest of the night—at the theater, with family, or simply at home—while promoting well-being. Inspired by the sun-drenched flavors of the Mediterranean, the cuisine effortlessly blends French classics with modern bistronomy recipes. Langoustines with fleur de sel, paccheri with morels, sea bass with confit artichokes, and roasted scallops in beurre blanc are all served in a spirit of conviviality and sharing. The intentionally concise menu changes with the seasons to ensure freshness and precision, delivering a flawless gourmet experience. Here, refinement is expressed through generosity, attention to cooking, and meticulous presentation that does not compromise the warmth of the dish.

Our Dinner Discovering Reinvented Classics

Upon arriving at Brasserie l'Émil, we were immediately charmed by the elegant and intimate atmosphere, ideal for enjoying a refined and warm dinner. To begin the meal, I chose a glass of 2023 Côtes de Provence from Château Malherbe, whose fruity freshness was a perfect introduction.

To start, the Spiced Crab & Avocado stood out with finesse: the avocado slices, carefully arranged, offered a fresh and creamy base for a generous dome of subtly spiced crab meat topped with crunchy radishes. A delicate dish that beautifully kicked off the flavor journey. Alongside it, the famous Foie Gras from the bar “La Croix Rouge” revealed a thick slice with a texture both melting and silky. Served with lightly toasted country bread, it came with a red fruit chutney balanced between sweetness and acidity, and a pinch of fleur de sel to enhance its aromatic depth.

For the main course, we discovered two very different yet equally appealing dishes. The Château Filet, served in a copper pan, stood out for its perfectly executed cooking, nicely caramelized surface, and Kampot pepper sauce—bold yet velvety—elevating the tenderness of the meat. Next to it, the Mediterranean Sea Bass was elegantly plated, with a crispy skin and tender flesh, complemented by the sweetness of confit artichokes and the roundness of delicately fruity olive oil. These dishes were accompanied by crunchy green beans and buttery mashed potatoes, adding a rustic and comforting gourmet touch.

To end the dinner, we chose two emblematic desserts. The Crème Caramel, creamy and subtly flavored, melted gracefully in the mouth, evoking childhood sweets in an elegant and well-executed version. Finally, the Flambéed Crêpes Suzette offered a delicious finale, draped in a citrus sauce flambéed with Grand Marnier, blending caramelized notes with vibrant orange zest.

My Opinion

By elegantly revisiting the spirit of grand Parisian brasseries, Brasserie l'Émil stands out as a special place where time seems suspended between tradition and modernity. Within the intimate and refined setting of Château Voltaire, every detail—from the plate to the lighting—celebrates a certain vision of the French art of living. Whether for an Early Dinner or a more traditional meal, the experience is always precise, generous, and full of charm. A discreet address to discover and rediscover, in tune with the seasons and one's desires.
