From the moment I arrived at R-HAAN, the elegance of the venue and the attention to every detail signaled an exceptional evening. A map of Thailand, drawn with lobster powder, stood before me, marking the beginning of our culinary journey. Each region of the country was revealed through a succession of refined and inspired amuse-bouches. The North began with a Lanna-style confit tomato salad, nestled in a golden pastry and accompanied by a creamy avocado mousse from the Royal Project. The next bite, from the Central region, featured a stuffed shiitake mushroom, elevated by the subtlety of Thai spices and delicately placed on a leaf-shaped base. Then, heading to Isan, a spicy catfish and wolffia croquette delivered a perfect balance of crispness and tenderness, enhanced by a touch of fermented fish sauce. Moving further South, I discovered a terrine of fermented fish entrails, served with pineapple chutney and turmeric crisp, a bold mix of textures and flavors. Finally, my gustatory journey ended on the Eastern coast with a green onion pancake filled with crab fat paste, where the sweetness of stir-fried noodles met the briny richness of crab in an incredible marriage of finesse.
