Each dish is an ode to aromatic herbs, citrus fruits, and crunchy vegetables, carefully selected from local Thai farmers or grown in their own greenhouse. The olive oil, a true taste pleasure, is infused with lemons from Menton and produced exclusively for Mirazur and Côte. Sustainable line-caught seafood is carefully selected daily, ensuring unparalleled quality and freshness. The service team has also been honored, winning the Service Award from the Michelin Guide Thailand 2022, demonstrating their commitment to enriching each visit with exceptional hospitality.

Regarding design, the restaurant's interior space combines modernity and warmth. Furniture in brown shades creates a welcoming atmosphere, while palettes of cream and light gray add a touch of refinement and softness. Large bay windows frame the space, flooding the room with bright natural light and revealing an impressive view of the Chao Phraya River.
Our Tailored Culinary Journey: The Carte Blanche Menu Experience
Chef Davide Garavagil carefully crafted several tasting menus, from the four-course Escapade lunch to the lavish nine-course Carte Blanche menu. We chose the latter, enhanced by a carefully selected wine pairing. The essence of the Carte Blanche menu lies in its lack of a printed menu, allowing total customization based on the preferences expressed by each diner, thus guaranteeing a tailored and unforgettable culinary experience.
Our gastronomic adventure began with appetizers that immediately transported us into the world of Mediterranean flavors, including raw fish. We were then invited to discover the lemon-infused olive oil served with fresh bread. The first course, a delectable sweet-salty mix of Brittany brown crab, caviar, and pineapple emulsion, made a remarkable entrance. Then, sea urchin paired with amaranth and brown butter was beautifully presented on a green plate that highlighted the vibrant color of the sea urchin.
The langoustine with mandarin and turmeric was one of my favorites, offering flavors typical of the south of France. The journey continued with red mullet, red shrimp, and red shiso, before turning to more comforting dishes like Mimolette ravioli, bottarga, and peas, which also won over my palate. Opting to forego the chef's signature pigeon dish for personal preference reasons, I chose the lamb accompanied by Swiss chard, artichokes, and lavender, which was absolutely exquisite.
The journey wouldn't be complete without a selection of French cheeses, which particularly resonates with our palates. In conclusion, sweetness crowned this feast with a guava dessert, guava granita, and apple-ginger sorbet, followed by the surprising trio of coconut, black sesame, and Madras curry, a culinary discovery that was both surprising and delicious.
This nine-course menu was an enriching experience, beautifully complemented by a variety of European whites, chosen for their ability to complement the delicacy of the fish and seafood.
My Review
Dining at Côte by Mauro Colagreco was a superb moment in the sumptuous setting of Capella Bangkok. The Carte Blanche menu experience surpassed all my expectations, with dishes that not only captivate the taste buds but also tell a story, skillfully blending Mediterranean flavors and local products, all in exquisite tableware. Each service was a demonstration of mastery and creativity, especially the dessert which was a true culinary revelation. Adding to that an attentive team and an enchanting setting, Côte is not just a meal, it's a celebration of culinary art. Highly recommended for those seeking an exceptional gastronomic experience in Bangkok.
