The place perfectly combines the soul of Southern Italy with the aesthetics of refined design, creating an atmosphere that is both intimate and inspiring. It was in this unique setting that we enjoyed a poetic dinner, carried by creative dishes, bold flavors, and an unforgettable view of the Eternal City.

Six Senses Rome is located in the Palazzo Salviati Cesi Mellini, a 15th-century palace that has retained all its splendor after meticulous restoration. While the exterior remains faithful to its history, the interior, imagined by designer Patricia Urquiola, skillfully combines modernity and tradition. The 96 rooms and suites, bathed in natural light, offer exceptional comfort, as does the spa—a true haven of well-being inspired by Roman baths. The hotel offers several restaurants, including the BIVIUM Restaurant-Café-Bar which focuses on modern, sustainable, and local Italian cuisine. The NOTOS rooftop, meanwhile, offers breathtaking views of the city. That's where we chose to dine, enjoying the elegant ambiance and the exceptional view of Rome.

The NOTOS Rooftop stands out with a unique style, at the crossroads of contemporary design and Mediterranean soul. Perched atop the luxury hotel, it takes the form of a lush hanging garden, where aromatic herbs, plants, and terracotta pottery create an atmosphere that is both elegant and natural. The space, conceived as an escape between sky and earth, opens onto spectacular panoramic views of the Eternal City, with San Marcello al Corso church and the Montecitorio tower on the horizon. Comfortable lounges and open-air tables enhance the refined sense of conviviality, where every design detail is crafted to offer an immersive and relaxing experience—from lunch to dinner.
On the culinary side, the concept is based on a modern interpretation of Mediterranean traditions, inspired by the flavors of Southern Italy. Executive Chef Fabio Sangiovanni highlights seasonal, fresh, and local products to compose a vibrant menu with marine and plant-based notes. Neapolitan and Roman touches enrich dishes like clam gnocchi or caramelized mackerel, while the desserts recall the freshness of the Amalfi Coast. The experience is completed with a menu of signature cocktails, botanical mocktails, and fine wines, making NOTOS not just a restaurant, but a true sensory journey suspended above Rome.
Southern Flavors and Panoramic Views: The Magic of NOTOS
Our dinner at NOTOS began with two signature mocktails, each with a distinct identity. The Velvet Brew for my husband, with its rich and robust flavors, envelops the palate in a soft and silky texture, blending espresso, orgeat, almond milk, and a hint of cinnamon. Fresher and more sparkling, I chose the Vitae Vigor, which proved to be a revitalizing elixir infused with lemon verbena, uplifted by honey and citrus, and animated by a light bitterness evoking a spring breeze.
We then chose the Menù Intuizione, a formula that allows you to create a personal journey through four à la carte dishes. The first, a scampi carpaccio, was a plate of great visual and gustatory purity: the raw flesh, delicately translucent, was enhanced by the crunch of Neapolitan tarallo, the milky sweetness of stracciata di bufala, and the aromatic freshness of tarragon. It's a dish that perfectly expresses the Mediterranean spirit: light, refined, and built around a harmony of textures and flavors, with a contemporary aesthetic that highlights the sophisticated simplicity of the ingredients.
Then came my favorite dish: gnocchi with vongole veraci. Their melting texture met the iodized intensity of the clams, softened by friggitelli peppers and brightened with candied lemon. A subtle marriage of land and sea, sunny and vibrant, which to me embodies Italy in all its generosity and deliciousness.
For the main course, the duck breast (petto di anatra) was as elegant as it was flavorful. The duck, perfectly cooked, was elevated by a glossy jus and accompanied by slightly bitter young shoots. Orange blossom honey brought a delicate floral note, while the forest fruits—raspberries, blackberries, blueberries—infused freshness and liveliness, creating a refined balance between intensity and acidity. An elegant and gourmet plate, perfectly reflecting the spirit of contemporary Mediterranean cuisine.
Finally, the dinner ended on a sweet note with the Ricordo dell'Isola. An elegant reinterpretation of the caprese chocolate cake, it was served with silky vanilla sauce and topped with a quenelle of cream ice cream. The whole combined chocolate intensity with milky softness in a delicately floral presentation. A generous yet refined dessert that concluded the meal with a touch of dolce vita.
