Alessandro Fiacco, 36 years old, originally from Ciociaria, has always been driven by a deep passion for cooking. From a young age, he was already recreating family recipes, convinced that his place would one day be behind the stove. After attending the Professional Hospitality Institute, he began his career at just sixteen as a kitchen assistant in Trentino-Alto Adige, before moving to Liguria, and later returning to his native region to hone his skills in luxury hotels. These experiences, from prestigious spa resorts in Fiuggi to renowned establishments in Rome, shaped him into a talented chef, combining discipline, creativity, and a genuine attachment to authentic Italian flavors.
Our Dinner at Le Terrazze Restaurant
Our dinner began with a red shrimp tartare from Mazara del Vallo, a Sicilian specialty renowned for its delicacy and sweetness. Presented as a delicate cylinder, the tartare was subtly enhanced with wild fennel and a touch of lime, then topped with young salad shoots for a fresh note. This dish elegantly combined Mediterranean authenticity and contemporary refinement.
We then continued with ricotta and spinach ravioli, whose golden pasta enclosed a creamy, delicate filling. Topped with a lightly candied cherry tomato sauce and infused with fresh basil, these ravioli perfectly embodied the elegance of traditional Italian cuisine. Simple and refined, they paid tribute to the richness of local products in a bright and sunny dish. My husband chose the saffron-scented tagliolini, with a vibrant color and silky texture. Their creaminess was elevated by generous buffalo milk stracciatella, bringing softness and balance to the intensity of the spice. The sun-dried tomatoes used as garnish added a sweet and tangy depth of flavor.
The journey continued with roasted octopus, tender and slightly caramelized. Placed on a bed of smooth green pea hummus, enhanced by a touch of Roman mint, it offered a beautiful harmony between intensity and freshness. Some sprouted shoots completed the plate, adding lightness and elegance to a dish with resolutely Mediterranean accents.
Finally, the meal ended on a sweet note full of contrasts. On one side, peaches in white wine accompanied a creamy and refreshing yogurt ice cream, delicately flavored with mint. On the other, the Singer tiramisu, served in a cup, revealed a silky cream topped with an intense cocoa veil. A perfect duo, balancing fruity and tangy freshness with the timeless indulgence of a great Italian classic.
