Nikko yuba, a local specialty, reveals a silky, delicately milky texture, accompanied by simmered seasonal vegetables that add depth and softness. This opening immediately sets the tone: a demanding cuisine built on purity of ingredients and mastery of technique. The bento then arrives, impressive and strikingly beautiful. It features three sashimi of remarkable freshness, sliced with extreme finesse; Tochigi vegetables and young ayu marinated nanban-style, offering a subtle balance of acidity and sweetness; and an almost airy chawanmushi, enriched with eel from the Nakagawa River, bringing comforting umami depth.
The hot dishes then give the Nikko Gozen its full dimension.
