Located on Sentosa Island, Capella Singapore perfectly embodies the union of heritage and modernity. Nestled in the heart of 30 acres of lush tropical forest, this five-star establishment overlooks the South China Sea and offers an idyllic setting, away from the urban hustle and bustle of Singapore. Designed by Foster + Partners, it elegantly mixes colonial architecture with contemporary lines, while its interiors, initially imagined by Jaya Ibrahim and redesigned by André Fu Studio, invite you to a refined immersion in a sophisticated universe. More than just a hotel, Capella Singapore is a true destination in itself, where villas with private pools, gourmet restaurant, exceptional spa, and access to the preserved beaches of Sentosa make up a luxurious and intimate experience. We went there to discover Fiamma, its Italian-flavored restaurant, as well as The Pineapple Room, its brand new bar promising an elegant and refined atmosphere.
Fiamma: The Perfect Balance between Rustic Design and Contemporary Elegance
Imagined by André Fu, the design of Fiamma plays on a subtle harmony between rustic elegance and contemporary refinement. Nestled in a space that opens onto the tropical canopy and the South China Sea, the restaurant fully takes advantage of its exceptional location thanks to large bay windows that blur the boundary between inside and outside. Each corner of the restaurant tells a story, with distinct spaces that flow naturally, offering a fluid and immersive experience. From the entrance, rattan armchairs and solid wood tables create a warm atmosphere, while the semi-private Den showcases an impressive wine cellar and a majestic wood-fired oven, the true centerpiece of the place. Further on, the main dining area, the Living Room, opens onto a spacious terrace, where wooden furniture and natural hues blend with the surrounding vegetation, creating a serene and intimate break.
The color palette and materials chosen by André Fu infuse Fiamma with an atmosphere that is both authentic and sophisticated. Here, rusticity is refined, far from any austerity, with earthy tones ranging from deep brown to burnt orange, through powdery shades of pink and eggplant. The ceiling is adorned with wooden beams, enhancing the warm character of the place, while wrought iron accents subtly punctuate the space. The floor, covered with Cinza stone from Portugal with natural gradients, adds a textured depth that complements the ensemble. Far from a rigid uniformity, the decoration bets on a balance between textures and materials, creating an ambiance where luxury expresses itself with discretion.

Our Refined Dinner at Fiamma: Between Tradition and Modernity
Our dinner at Fiamma began with a selection of refined starters, showcasing the richness of flavors and textures. The Carpaccio di Zucca opened the ball with its vibrant colors and subtle play of contrasts: thin slices of pumpkin and beetroot, enhanced by the crunch of chestnuts and the tangy sweetness of pomegranate, were lifted by the intensity of black truffle and the depth of aged balsamic vinegar. A touch of mint added a refreshing elegance.
Continuing, the Burrata d'Autunno offered a creamy and indulgent experience. Accompanied by braised cabbage and sautéed mushrooms, this burrata from Puglia was delicately enhanced by leek, parsley, and Vesuvio tomatoes, while capers and peanuts added contrasting touches between salinity and crunch. Finally, the Crudo di Gambero Rosso di Mazara captivated with its apparent simplicity and perfect balance: the tartare of red prawns from Sicily, seasoned with citrus and enhanced by kumquat and beans, paid homage to marine flavors in their purest expression.
We then continued with two signature dishes that demonstrated the chef's expertise. The Tagliatelle all'Astice, served in an elegant copper pan, combined the delicacy of blue lobster with a rich and fragrant sauce, enhanced by tarragon and the sweetness of confit tomatoes. A dish of great generosity, where each bite revealed a perfect balance between richness and freshness. In a completely different style, the Carpricio, a Neapolitan pizza with golden and puffed edges, celebrated Italian tradition with a base of San Marzano tomatoes, melting Fior di Latte mozzarella, and a combination of Neapolitan sausage, smoked mushrooms, and capers from Salina.
To conclude this gastronomic journey, the quintessential Tiramisu, served in a ceramic bowl, surprised with its airy texture. Under a thin caramelized shell, the mascarpone cream mingled with a biscuit savoiardi delicately soaked in espresso coffee and Amaretto, offering a comforting sweetness to close this meal on an exquisite note.
The Pineapple Room: A Refined Tribute to the History of Sentosa
Perched above the entrance hall of Capella Singapore, The Pineapple Room reveals an intimate and sophisticated setting, inspired by the lesser-known past of Sentosa Island, once a flourishing pineapple plantation. This elegant bar pays tribute to this heritage through a refined aesthetic where every detail evokes hospitality and colonial charm. Inside, the design combines rattan furniture, vintage luminaires casting a soft light, and a teak counter topped with Carrara marble, adding a touch of discreet luxury. Ancient maps of Singapore and botanical works, commissioned from local artists, complete this subdued decor, weaving a link between history and modernity. During the day, the space is a soothing cocoon for a refined tea time, before transforming at night into a sophisticated bar where conversations come alive in an enveloping atmosphere.
In this enchanting setting, The Pineapple Room offers an inventive cocktail menu, celebrating local flavors and the botanical riches of Singapore that we were able to test before dining at Fiamma. Subtle creations like the Queen of Spice, a bold marriage of pineapple rum, apricot liqueur, and cardamom, or the Indian Summer, a tropical explosion with notes of Rajasthan orange and calamansi, reflect the vibrant spirit of the place. Two outdoor terraces extend the experience, offering a haven of serenity where you can sip a drink while admiring the lush vegetation of Capella Singapore. Whether for an aperitif before dinner or a last drink under the stars, The Pineapple Room stands as a must-visit stop, combining heritage and modernity in a setting that is both warm and sophisticated.

Leaving Fiamma, I keep in memory a generous and refined Italian cuisine, where each dish signed by Mauro Colagreco celebrates authenticity and product excellence. The warm atmosphere and elegant setting enhance this gourmet and authentic experience. The Pineapple Room, with its subdued charm and inspired cocktails, extends this sensory parenthesis in an intimate and sophisticated ambiance. Between mastered flavors and refined decor, these two addresses make Capella Singapore an essential gourmet stop, where one takes pleasure in savoring every moment.
