The culinary experience is elevated by attentive and warm service, creating a perfect balance between elegance and conviviality. The sommelier, an expert in wine pairing, guides diners through an exceptional drink menu, highlighting renowned vintages that harmonize beautifully with each dish. Even occasional wine enthusiasts will be charmed by the delicacy of this selection. At Collage, every detail, from product selection to the final presentation, reflects a pursuit of excellence that transforms every meal into a memorable experience.

Our Sensory Journey Between Elegance, Creativity, and Technique

Our magnificent evening began smoothly, with a glass of champagne welcoming us as we explored the particularly enticing "Authentic" menu. We started the meal with an amuse-bouche that set the bar high: a true enchantment for the eyes and taste buds. This perfectly executed trompe-l'œil, shaped like a cigar with iodized flavors and a salmon filling, was presented in an elegant setting, impressing with its realism. Continuing the theme of visual illusions, small bites shaped like black rocks were equally exquisite.

The evening continued with an exceptionally refined first course: a harmonious marriage of Japanese avocado, shrimp, Japanese pear, and caviar. Each bite revealed a silky texture and subtle flavors, magnified by a Riesling Aus Den Lagen, a white wine that is both complex and delicate, offering a perfect pairing.

We continued this culinary adventure with a comforting and nuanced dish: Yairo shiitake mushrooms from Niigata, accompanied by braised beef cheeks and a refined consommé. The woody aromas and the tenderness of the meat brought a soft and enveloping warmth. Then, a true culinary masterpiece was unveiled: Hokkaido potato cappellini, aged for two years, served with fresh fish from the port and celery. This dish, combining technique and clear flavors, was a revelation and undoubtedly my favorite of the evening.

The transition to meat was done smoothly, with meticulously selected vegetables from Kitayama Farm in Shizuoka and perfectly cooked Omi duck. This generous and balanced dish was enhanced by a French red wine from the Rhône, Poivre et Sol from Domaine François Villard, offering great aromatic depth.

The dessert course began with freshness and lightness, thanks to a citrus sorbet made from Ehime’s Unshu Mikan and apricot, a subtle and delicate start. This was followed by a spectacular reinterpretation of a French classic: tarte Tatin. Made with Aomori apples, it was accompanied by delicately spiced ice cream and an exceptional sake. This dessert, sophisticated and daring, elevated the original flavors while bringing a modern touch that completely won us over. To conclude this experience beautifully, lovely petit fours, skillfully crafted with distinctly Japanese flavors, closed this exceptional meal on a delicate and refined note.

My Opinion

My experience at Collage restaurant at Conrad Tokyo was a true culinary revelation, where the elegance of the setting competes with the creativity of the dishes. Each plate combines audacity and technical mastery to offer a unique sensory journey rich in emotions. The subtle combination of French traditions and Japanese ingredients, enhanced by impeccable service, is magnified by perfectly orchestrated food and wine pairings. The sommelier, with remarkable expertise, offers exceptional vintages that elevate each dish and add an extra dimension to this gastronomic adventure. For me, Collage is more than a restaurant: it’s a destination where the passion for excellence is savored in every bite and sip. A place I will gladly return to!
