Marcel Finsterer Passionately Reinvents Asia at Sea Fu

Chef Marcel Finsterer brings with him a rich experience and a deep passion for cooking, inherited from his family roots in the restaurant business. From an early age, he was captivated by the aromas and flavors, which drove him to travel and immerse himself in culinary arts around the world. He then developed a special love for Asian cuisine, specializing in the art of transforming simple ingredients into exquisite and memorable dishes.

Our Lunch Facing the Sea

The cuisine at Sea Fu, both chic and modern, draws heavily from Asian culinary traditions with a particular emphasis on seafood, creating a refined and contemporary gastronomic experience. Our lunch on the terrace allowed us to explore a variety of flavors while enjoying a stunning view of the sea. We started with mocktails inspired by the seven wonders of the world, which awakened our taste buds by evoking iconic places such as the majestic Great Wall of China and the breathtaking heights of Machu Picchu. These drinks, accompanied by edamame, set the stage for a delicious lunch.

The selection of sushi particularly impressed us, offering a range from sashimi to nigiri and maki. We opted for the Alaska king crab roll with tokiko, avocado, and cucumber, which was a masterful demonstration of the balance of flavors. Next, the grilled octopus with potato, ssamjang emulsion, and bulgogi sauce married textures and aromas in a sublime way.

For the main courses, we chose the slow-cooked turbot fillet, accompanied by braised morels, miso, parsnip puree, and wakame, and the A5 grade Australian Wagyu beef fillet, served with truffle mashed potatoes, maitake mushrooms, and Sichuan pepper sauce. These dishes were executed with remarkable precision, offering deep and satisfying flavors that fully met our culinary expectations.

The dessert was the perfect finishing touch to our meal, with creations by renowned pastry chef Nicolas Lambert, who is building a great career within the Four Seasons Group. We savored the yuzu and passion fruit cheesecake, accompanied by poached nashi pear, passion fruit coulis, goji berry sauce, and hibiscus. The 'Satsuma' baba with mandarin and green shiso was equally spectacular, blending sweetness and acidity with a refreshing sorbet and shiso jelly. These desserts, not only beautiful but also incredibly creative, concluded our lunch on a high sweet note.

My Review

My lunch at Sea Fu was much more than just a meal, it was a beautiful escape where each dish told a story. The setting, with its spectacular view and relaxing ambiance, enhanced this experience, making it an ideal gourmet break at lunchtime. The excellence of Marcel Finsterer's cuisine, combining the freshness of seafood with the subtlety of Asian spices, left me with an excellent memory. The desserts, for their part, brilliantly concluded the meal with their boldness and originality. Sea Fu is undoubtedly the ideal place to savor a feast facing the sea.
