Maido: Fusion Cuisine in Lima Combining Japanese and Peruvian Flavors

Ranked #10 in the world's best restaurants list by The World's 50 Best in 2019, Maido restaurant was the precursor of a new culinary movement called Nikkei that combines Japanese and Peruvian flavors on a single plate. Chef Mitsuharu Tsumura is the head of this movement much appreciated by foodies, and he favors seafood in his dishes.

Among his signature dishes, we can mention the delicious miso-marinated cod, the ribs cooked for over 50 hours, and for dessert, the tofu cheesecake.

Born in Lima, the chef went to the United States to study cooking before traveling to Japan to gain more experience. He then returned to Peru to open his famous restaurant. He also leads several other projects such as the Sushi Pop restaurant chain and the Karai table in Santiago. In 2018, he opened the Ají restaurant in Macao.
