Allen Hyunmin Suh: From the American Dream to Michelin-Starred Cuisine in South Korea
Allen Hyunmin Suh discovered his passion for culinary creation during his studies in hotel management at the University of Nevada. He then honed his expertise in Michelin-starred restaurants in Las Vegas, San Francisco, and New York. In 2013, he joined Daniel Humm at the renowned Eleven Madison Park, where he perfected his craft and rose through the ranks to become Sous-Chef. After spending 17 years abroad, Allen returned to South Korea to lead the opening of the restaurant L'Impression in Seoul, which earned two Michelin stars in its first year. In 2021, eager to bring his own culinary vision to life, he opened the restaurant Allen, a space where he can fully express his art and refine his professional philosophy.
Our High-Flying Seasonal Culinary Journey
To highlight the beauty of South Korea's four seasons, the tasting menu changes every three months to align with seasonal products. Wine pairings, as well as non-alcoholic options, are available to accompany this gastronomic experience.
We had the privilege of dining at the restaurant Allen for an exceptional lunch. After a detailed presentation of the seasonal ingredients that would enhance our meal, we began the experience with a selection of amuse-bouches presented on wooden trays, thus elevating the visual aspect of the dishes. This culinary journey began with typically French flavors such as foie gras or even gougères, mixed with Korean touches, such as Korean melon. A refined and promising start.
The first course, composed of tomato and summer seafood, was flavorful and incredibly fresh. We then enjoyed a seasonal fish accompanied by zucchini and green vegetables, followed by a surprising smoked eel paired with an egg and cucumber, whose creamy hollandaise sauce perfectly complemented the whole.
We continued this marine exploration with a sole enhanced by a red wine sauce and bell pepper. This bold pairing of red wine, typically reserved for meat, brought unexpected depth to the delicacy of the sole. Cold soba noodles in a light broth then offered a delicate pause.
For dessert, melon and green grapes were beautifully highlighted, emphasizing the freshness of seasonal fruits. To end this feast on a high note, a selection of petit fours – canelé, madeleines, shortbread, and chocolate – added a final gourmet touch to this unforgettable culinary experience.
My Review
This lunch at the restaurant Allen was a true culinary odyssey, where finesse and boldness harmoniously intertwined. Each dish told a story, that of the Korean seasons, enhanced by mastered French techniques. Allen Suh took us on a journey between tradition and modernity, respecting the purity of the ingredients while reinventing them. The calming ambiance of the place, combined with impeccable service, magnified this exceptional experience. This meal will be remembered as a unique moment where the art of the table meets that of taste, in a symphony of unforgettable flavors.
