An Address Reimagined Over the Years

Pan Pacific Singapore cultivates a contemporary and spectacular style, where urban elegance meets a true architectural sense of staging. Its evolution has unfolded in stages, notably in 2012 with the full renovation of more than 280 rooms, the opening of Edge, a vast buffet restaurant with Asian and international influences, and the relocation of the Pacific Club Lounge to the 38th floor, now bathed in 360-degree views over Marina Bay and the skyline. That same year, suspended pods appeared in the atrium, becoming one of the hotel’s visual signatures. In 2016, the outdoor pool was completely redesigned as a tropical oasis, with lush greenery, water features, private relaxation areas, a children’s pool and a waterside bar. Then, in 2017, the 806-square-meter Pacific Ballroom was revitalized in a more opulent spirit. A succession of metamorphoses that today shapes a cosmopolitan, fluid and resolutely Singaporean aesthetic.

Certain categories enjoy spectacular views over Marina Bay or the Singapore skyline, while Pacific Club rooms and suites include access to the Pacific Club Lounge, perched on the 38th floor, with exclusive privileges and a 360-degree panorama over the city.

Set on the hotel’s upper floors, the 46-square-meter Executive Marina Bay room where we stayed offers a particularly appealing experience, elevated by its balcony overlooking the skyline and Marina Bay. The room, dressed in soft, luminous tones, frames the view with almost theatrical elegance: the bed faces the picture windows, allowing guests to wake to the spectacle of the city as the automated blinds rise. Near the window, a chaise longue with a coffee table invites relaxation, while a work area is positioned behind the headboard. Guests in this category also enjoy access to Studio 26, a self-service lounge where drinks and light pastries are available throughout the day.

The Suspended Breakfast at the Pacific Club Lounge

Set on the 38th and top floor of Pan Pacific Singapore, the Pacific Club Lounge offers guests staying in Club rooms and suites an exclusive interlude above the city. Exceptionally spacious, it reveals spectacular 360-degree views over Marina Bay, the skyline and the shimmering South China Sea. In a classic, hushed decor, between sky-blue tufted sofas, embroidered lampshades, sculptures and art objects, the atmosphere is equally suited to relaxation and more discreet meetings. The details that accompany the experience heighten this sense of understated privilege: refreshments and snacks throughout the day, dedicated concierge service, complimentary late check-out until 2 p.m., included pressing, complimentary non-alcoholic beverages in the minibar and even, for certain guests, reservation access to private dining rooms.

On the culinary side, the Pacific Club Lounge structures the day with elegance, from breakfast with Champagne served from the morning to afternoon tea, followed by evening cocktails with canapés facing the lights of Singapore. Breakfast remains one of the most beautiful moments of the experience, especially when the sun rises over Marina Bay. The signature menu blends generous classics with healthier options. We chose the two farm eggs, served with potato galette, young garden greens, vine tomato, sautéed mushrooms and chicken sausage. The Eggs Benedict, set on a toasted English muffin with hollandaise sauce and smoked salmon, offer a more refined take on this great classic. Finally, the Club French toast brings a distinctly indulgent touch, with soft brioche, caramelized banana sauce, coconut mousse, berries and nuts.

Hai Tien Lo, Cantonese Tradition Gracefully Reimagined

A Singapore institution celebrated for nearly four decades, Hai Tien Lo embodies the elegance of traditional Cantonese cuisine subtly reinterpreted. Under the direction of Executive Chinese Chef Edden Yap, the restaurant composes a refined score in which ancestral recipes meet contemporary techniques and presentations of remarkable precision. Trained from the age of 15 and enriched by an international career from Dubai to Greater China, notably Macau, the chef brings narrative depth to every plate, between respect for heritage and measured audacity. The Chef’s Signature Menu offers a particularly captivating immersion into this world of haute Cantonese gastronomy, with a succession of dishes that play on precise cooking, the richness of broths and the brilliance of condiments. The opening sets the tone immediately: sliced crispy lacquered suckling pig, enhanced with caviar, brings together the crackle of the skin, the tenderness of the flesh and an elegant saline note. Alongside it, Tiger Babylon shellfish marinated in wasabi sauce add vivid, lightly piquant freshness, while glazed cherry tomatoes marinated in plum wine jelly offer a fruity, tangy note that balances the whole. The Dendrobium chicken soup, double-boiled with fish maw, dried scallops and sea whelk, then illustrates the full Cantonese art of broth: clear, deep, delicate and remarkably persistent on the palate.

The steamed sea perch fillet, accompanied by aged Teochew preserved radish, charms with its purity and silky texture, the condiment adding just the right touch of salinity and character. More grounded, the wok-fried Angus beef fillet with green vegetables and black pepper sauce reveals perfect mastery of fire, between tender meat, smoky fragrance and spicy intensity. The fried Ibérico pork ribs in creamy sauce, garnished with lime zest, play on an indulgent contrast between crispness, creaminess and aromatic freshness.

The dish of Japanese rice vermicelli simmered with lobster meat and pan-seared scallops, in a tangy tomato broth, brings a savory finale that is both generous and luminous, where the sweetness of seafood meets the liveliness of the broth. Finally, the chilled mango cream with sago and Snow Swallows concludes the meal on an exotic, silky and refreshing note, faithful to the balance sought throughout the experience.

Keyaki, The Ritual of Sushi, Teppanyaki and the Seasons

At Keyaki, the Japanese experience unfolds in a serene and refined setting, between traditional elegance and the spirit of a Kyoto garden, with its koi ponds and hushed atmosphere suited to exceptional dinners. The house celebrates authentic, precise and delicate Japanese cuisine, from sashimi of great purity to meticulously crafted sushi, as well as teppanyaki, kaiseki and omakase presentations. At the helm, Executive Japanese Chef Teruya Noriyoshi brings more than 28 years of international experience, gained across Japan, the United States, Europe, Australia and Singapore. His cuisine rests on fresh, seasonal ingredients, often imported directly from Japan, mastered gestures and an artistic presentation that celebrates nature as much as tradition.

We chose the RURI menu, an elegant progression that begins with a delicate amuse-bouche, conceived as a subtle first note before the arrival of premium sashimi of remarkable freshness. The tempura, light and crisp, then brings a finely judged contrast, before the chef’s specialty, more elaborate, reveals the depth of Japanese flavors. The highlight of the meal unfolds around the lobster, briny and generous, in a decidedly indulgent preparation. The menu continues with five kinds of sushi, each showcasing the precision of the rice, the quality of the fish and the balance of seasoning, before a comforting miso soup and a light dessert with sesame and hojicha ice cream, all softness, closing the experience on a delicate and harmonious note.

In addition to these two exceptional restaurants, the address offers a dining scene as elegant as it is transporting. At PLUME bar, creations inspired by Singapore’s birds seduce with their precision and sense of spectacle, from the herbaceous Woodpecker to the Red Crowned Barbet in clear milk punch, and the Greater Racket-tailed Drongo with notes of cognac, mint, peach and lemon. More intimate, Pacific Emporium celebrates the local soul through artisanal products, Peranakan flavors and a refined afternoon tea, served in a majestic decor punctuated by intimate pods. For a more abundant experience, Edge offers a vibrant international buffet, where Asian and Western cuisines converse around seafood, signature laksa, squid ink paella and roasted carvings. Finally, the Poolside Restaurant & Bar invites guests to prolong the tropical softness with Mediterranean-inspired specialties, signature cocktails and languid moments in a cabana, at the heart of a lush green setting.

My Review

With its strategic location in the heart of Marina Bay, its rooms oriented toward the horizon, its Pacific Club Lounge suspended above the city and its remarkably rich dining scene, Pan Pacific Singapore stands as one of the Lion City’s great timeless addresses. The hotel succeeds in preserving the aura of an icon opened in 1986 while cultivating elegant modernity, carried by ambitious renovations, a keen sense of comfort and attentive hospitality. An ideal address for travelers seeking spectacular views, culinary pleasures and discreet luxury to the vibrant rhythm of Marina Bay.

I loved:

  • A superb view over Marina Bay, to be admired both from the lounge and from our Executive Marina Bay room.
  • The restaurants stand out for their quality, with a special mention for the Cantonese and Japanese addresses.
  • A very complete hotel, which manages to bring together tourists, business travelers and families with ease.

I regretted:

  • No major flaw is worth noting, though the accumulation of small imperfections here and there slightly tempers the overall impression.
